Slow-cooked Shredded Pork


Shredded pork is a versatile and delicious meat to have on hand in the fridge and/or in the freezer.  Make it in a large batch to keep some in the fridge and freeze the rest. This stuff thaws out fast for a quick, last minute meal.  The meat is versatile: eat it plain and salted, put it in a taco, cover it with BBQ sauce, have it on a salad, have it with eggs for breakfast or.......... as a side for a snack.  I’m sure there’s ways to use it I’m not even thinking of here.

  • 5 pound(s) organic pork shoulder roast
  • salt and pepper, to taste
  • 0.5 cup(s) broth
  • 3 tablespoon(s) apple cider vinegar
  • 1 teaspoon(s) oregano
  • 1 teaspoon(s) thyme
  • 1 Piece(s) bay leaf

Slow-cooked Shredded Pork Directions

  1. Salt and pepper all sides of the pork shoulder roast; rub the spices into the meat with the back of a spoon.  If possible, salt the pork the day before cooking.
  2. Take the pork out of the refrigerator and allow it to come to room temperature.  This will take 1-2 hours.  
  3. Put the broth and herbs into the slow-cooker.
  4. Place the piece of pork in the slow-cooker, fatty side up.  Put the lid on.
  5. Set the timer of the slow-cooker for 6-8 hours on low or 3-4 hours on high.  I usually set the heat on high for the first hour to get things rolling, and then turn it down to low for the slow cook.  Do not lift the lid of the slow-cooker while food is cooking, as it releases a lot of heat.
  6. You will know the meat is done when it is ‘fork tender,’ meaning it is really soft and easy to poke a fork into.
  7. Take the roast (or part of the roast) out of the slow cooker and place it on a cutting board.  Using two forks, shred the pork into small, edible pieces.  Scrape off fat and other yickness and discard.  This step will take some time, about an hour or less.
  8. You may freeze the bone to use later in a broth.  Dispose of the liquid left behind in the slow-cooker by throwing it in the trash, in some sort of container.  Do not wash it down the kitchen drain.
  9. Enjoy~

The measurement of the ingredients are not absolute.  You can chose a roast that is bigger or smaller than 5 pounds, as long as it fits in your slow-cooker.  Likewise, the measurements for the broth and spices will vary depending on the size of your slow-cooker.  Just be sure not to add too much extra liquid because the pork will create a lot of juices as it cooks.
