Squash and Celeriac Home Fries


It is the same as regular home fries, but with SCD-safe ingredients. You can add spices to give a different flavor to the fries. And they're healthy!

  • 1 whole butternut squash
  • 1 whole large celeriac
  • 3 tablespoon(s) olive oil
  • 1 teaspoon(s) salt

Squash and Celeriac Home Fries Directions

  1. Preheat the oven to 350 degrees fahrenheit
  2. Peel the butternut squash,cut it in half, and scoop out the inside seeds. Chop the squash into 1/4 - inch (6-mm) peices. Peel the celeriac and chop into small pieces with the excess oil.
  3. Coat a baking tray with olive oil and salt, and coat the celeriac and squash pieces with the excess oil. Make sure all the pieces are coated with the olive oil.
  4. Bake in the oven until browned and cooked through, about 30 to 40 minutes. Turn the fries over during the baking process to ensure that they cook evenly.
