Mayonnaise recipe by Purefoods Doctor

This mayonnaise recipe is a great and easy improvement over commercial mayo. Here, another opportunity to take in some healthy fats instead of those nasty and dangerous commercial varieties.

Preparation time: 10 minutes

Ingredients

  • 1 large egg at room temperature
  • 1.5 teaspoon(s) lemon juice
  • 1 teaspoon(s) sea salt
  • 0.5 teaspoon(s) mustard powder, or mustard sauce
  • 1 cup(s) light or very mild-tasting olive oil
  • 0.25 teaspoon(s) white pepper, ground (optional)

Mayonnaise Directions

  1. Combine egg, lemon juice, and mustard in jar and use immersion blender and a wide mouth jar (and leave it in there).
  2. Drizzle the oil in little by little. Do not rush this process, you will end up with scrambled eggs mixed with oil!
  3. Once you have enough in there, you will see the material begin to thicker. You can move blender up and down until it is clearly looking like mayo.
  4. Get fancy by adding garlic to make aioli, or other spices you might like.
  5. Refrigerate in sealed container. This will keep for a week or so. Enjoy!
